Check the sensor with a volt meter set to Ohms scale.

Cold it should read 1350 ohms or so.

Hot it should read 50 ohms or so.

Check the coolant temperature sensor. The one in my Sonoma went bad and gave some funky readings. I replaced it and everything was fine for a year or so.

Then the gauge started acting kinda like your describing. It would be fine, then suddenly drop....I found that if I tapped on the plastic cover it would come back for awhile, then repeat. That went on for a few months....Then one day I was in a bad mood and noticed the guage doing it's shit...So I may have hit the plastic cover a little hard - punched right through it and hit the gauge needle. Since then it has been fine!! Obviously I did have to take the dash apart to replace the broken plastic cover....But it was well worth it. lol
